Description

Florence Duchêne is a young winemaker born in Champagne, with Filipino origins. She cultivates 4 hectares of vineyards with an average age of 40 years, spread over 56 parcels located on both sides of the Marne river, from Aÿ to Chatillon-sur-Marne. The hillsides are dominated by clay-limestone soils with a marly tendency. The grape varieties are comprised of Pinot Noir (51%), Meunier (34%) and Chardonnay (15%). A nod to the origins of the winemaker, each vintage bears the name of a Filipino god.

This fine cuvée presents an old style corking with string, an old gold colour and a nice effervescence. The bouquet is both complex and refined : spring flowers, juicy pear, cherry liqueur, bergamot and marzipan. The attack on the palate is straightforward and mouth-watering with flavours of candied citrus fruits perfectly integrating the 2g/l sugar. This wine can be served of an apéritif or paired with a semi-cooked foie gras and mango.

This cuvée seems to have been blessed by the gods. With 3g/l added sugar, it is composed of 50% Chardonnay, 45% Pinot Noir and 5% Pinot Meunier. This extra brut is characterized by aromas of white peach, strawberry and kumquat. There is power and vivacity on the palate as well as a chalky minerality. This champagne could be paired with grilled octopus.

The name of this cuvée is a tribute to the highest mountain the Philippines. Only 1000 bottles have been released. The garnet like colour accompanies a fresh bouquet, fruity and slightly spicy with aromas of Timut pepper. On the palate, silky tannins develop a clear and fresh acidity with a palatable mouthfeel. This wine could be matched with rib eye roast with bone marrow.
