Chef's Restaurant Chronologically, Sarah Mainguy's first address in Nantes, where we discover her cuisine in a joyful but wise hubbub. Everything is studied in cool style, both on the plate and in the glass, filled with whiffs of nature. The menu is deliberately simple, vegetal, sharpened for marriages that click in the right direction of the trend: leek peanut seaweed dulse and sorrel, peach of the day celery miso watercress, fumet, duck breast chestnut kumquat meat juice red cabbage, quince chestnut confit yogurt. Such a sequence, for less than €50, makes for a highly instructive voyage with Nantes' new guard.
