Chef's Restaurant Some assiduous readers might point out that our beloved Pickles is not progressing. Quite the contrary: by maintaining this 14 every year, high up in the local hierarchy, Dominic Quirke and his team prove that they are renewing themselves every season to deserve the 2 toques, which also represent a new reward every year. The place is well placed, bright, welcoming and modern, giving the impression - and not just to regulars - that you're in good hands, with friendly service always ready to enlighten you. The 5-course dinner menu at €60 is easy to follow, as the products are well chosen and the execution above the ordinary: squid gnocchi and cockles organic radish dashi, smoked scallops turnip leek organic pink onion buckwheat XO, monkfish Jerusalem artichoke cardamom saffron kohlrabi salsify ginger, all of these are lively plates, right through to the two-stage organic pig (beet miso smoked garlic, in tonkatsu and spinach) and the well-imagined dessert, sweet potato citrus beer. A wine cellar of great connoisseurs, with an always relevant selection by the glass (Bregeon, Delaunay, Cosse Maisonneuve...).
