Chef's Restaurant A true professional, a meal without false notes, the opinions of our investigators are categorical. When it comes to fine dining in the Vallée de Chevreuse, Laurent Trochain has been doing it with the same brio for almost twenty years. Long a forerunner in the use of local produce, he offers two menus, one of which is vegetarian, that are always interesting and seasonal. The subdued atmosphere in a modern setting, the highly competent service, the good humor and the quality extras, such as the excellent bread from Moulin des Moissons, set diners on the right track. Well-personalized starters (including cucumber carpaccio, raw gherkin, crab crumble, Aquitaine trout egg, chamomile, Baux-de-Provence olive oil and lemon juice), precision cooking - a perfect Barbary duck, served rosé, with black truffle meat jus, zucchini and garden beans, melting eggplant and spring onion -, followed by creative desserts (herb garden pre-dessert, cooked apricot and peach macerated in honey, sesame, almond, vanilla lemon balm, coffee ice cream and butter cookies). Good cellar with well-chosen wines by the glass.
