They made a name for themselves in Boulogne-Billancourt with their restaurant, La Table de Cybèle, which was a sensation among food lovers. Cybèle and Frank Idelot then fulfilled their longing for nature by taking over the Domaine les Bruyères, a former coaching inn dating back to 1850 nestled in the heart of the Chevreuse Valley, which they transformed into a bed-and-breakfast with great skill. In all, five guest rooms—named “Chêne,” “Tilleul,” and “Peuplier”—celebrate the rustic spirit of the location with natural materials, high-end bedding, and beautiful walk-in showers. When it comes to the kitchen, it quickly becomes clear that the Idelots haven’t lost their touch. The proof lies in the delicacies served at La Ruche, Chef Cybèle’s restaurant, which is entirely dedicated to gourmet cuisine that’s both locally sourced and eco-friendly: vegetables and fruits harvested from their 2,000 m² permaculture garden set the tone for the dishes, elevated by culinary expertise of rare precision.
