Chef's Restaurant It's an exceptional location just a few minutes from Cognac, a new Relais & Châteaux in a magnificent classic setting that's been completely renovated. The luxury hotel couldn't do without its own gourmet restaurant, run by Anthony Carballo. The latter takes advantage of a rare setting, that of a Napoleon III salon, imposing its elegance. Discover foie gras marbré cooked au naturel, powdered with wild licorice and a licorice and orange gel reduction; salmon confit with bergamot leaf oil, sucrine stuffed with peas and fava beans and smoked emulsion; roast suckling pig rib, capers and artichoke, tahini and bao bread with thinly sliced pig confit; and strawberry-rhubarb and meringue, elderflower. Very high-level cellar.
