Remarkable Restaurant The Verrat house continues to be one of the most exciting in the region, an address on the river where father and son work hand in hand, in a harmonious transmission. It's the experience of the father, Thierry Verrat, who has been at the helm for over thirty years, and the youth of the son, Julien, who brings all the modernity and invention of the moment. Technique and the exchange of ideas give birth to a full, lively experience, with original, cutting-edge compositions such as half-cruised, half-cooked langoustines, shellfish jelly, daikon, kombu and X.O. cognac mayonnaise, fillet of sole glazed with Charentais vermouth, steamed young wild leeks, slivers of melanosporum truffles, fillet of young duck roasted then smoked in barrel wood, fricassee of early vegetables with morel butter and garden sage, leg of duck in spring salad, new potato from the Ile de Ré, confit with vanilla beans and black truffle-vanilla ice cream. Menus from €64 to €149 for the Accord mets et cognacs menu.
