A time-honored establishment that the locals proudly keep alive, and which Chef Ludovic Merle—who has been at the helm for over twenty years—has skillfully evolved over time. The bistronomic spirit doesn’t overshadow the skill of a deft and conscientious chef who can do it all—from showcasing fine ingredients to revisiting culinary fundamentals in meticulously crafted dishes: “Napoléon” of foie gras and smoked salmon, with candied lemon and artichoke purée; monkfish with cardamom and Pineau des Charentes; celery with mild garlic and carrots; and crème brûlée with Grand Marnier and passion fruit sorbet—all part of a delightful three-course menu for €59. Food enthusiasts rave about the signature dish—veal sweetbreads with “truffonade” purée—while the €28.50 lunch menu also holds some pleasant surprises.
