Gourmet Restaurant Overlooking the Marne River, this splendid 19thᵉ century mill has retained only its walls, welcoming into its interiors a minimalist, contemporary decor by Thierry Bonne. The combination of glass and steel benefits Franck Arnaud's cuisine, which is equally sensitive to form and space. The €60 menu reflects this taste for precision, with red tuna cooked in salt, lime, tomato and kiwi, Scottish salmon gilded in olive oil, braised carrot, orange passion emulsion and mashed potatoes, pigeon with Apicius sauce and baby vegetables, nougat glacé with apples, calvados and candied fruit. Menus up to €120.
