On the edge of the département, between Château Thierry and Reims, high above the Marne, this old mill looks great and is well worth a visit. The locals don't hesitate to come and enjoy their family meals here. Chef Franck Arnaud knows how to cajole his guests, and offers them the fine produce they've come to expect, worked in a fine, up-to-date tradition: salmon tartare with Timut pepper and lime, foie gras with champagne ratafia, veal fillet with honey-ginger sauce, strawberry-basil tart, in a pleasant €60 menu.
