Gault&Millau's review 2026

Freedom is a precious commodity that Michel Trama uses without abusing. Everything here is unique and remarkable: the magnificent residence once built by the Count of Toulouse as a resting place, a quarter of an hour from Agen; the grace and taste with which Maryse and Michel have decorated it, based on ideas by Jacques Garcia; the elegance, almost from another era, that touches every aspect of the stay. Including this rare cuisine, now staged by their son Christopher and his brigade, bringing together Michel's creations from across the decades, some revised, others untouched: the foie gras and apple hamburger, boosted by tangy mango, the essential potato in green garb with melano truffle, the "simple" and unforgettable fries, but also the controlled extravagance that grips the subjugated taster: from the very first bite, the macrosporum host (a hybrid of melano and alba), the liturgy begins: the liturgy continues with langoustine in sesame oil on a fine bed of spicy watermelon, a "candy" tomato tartlet with a strip of astonishingly similar "tomato caviar" with its golden beads, or the evocation of Andy Warhol in the "Square Root", which combines chioggia beet, carrot, celery ball, potato and kohlrabi in a superb checkerboard pattern. Among the master's other blockbusters is, of course, the crystalline, here restored to its original form, with pineapple, Christopher also demonstrating, as he does throughout the meal, the quality of his interpretation. The suspended time allows us to appreciate a service that is available and focused, a cellar that is personal to the choices of the house, good knowledge of the entire southern region (with a soft spot for Négly, for example) in an ocean of good vibes.
