Gault&Millau Academy's member This summer, Michel Trama lost his best friend, the man he called "my master", Michel Guérard. He knows that he must now also take on that part of his heritage that he puts into practice so well, the love and passion for sharing and welcoming, which he has cultivated with Maryse for 45 years in Puymirol. So yes, this eminent member of the Gault&Millau Academy deserves all the praise and his five gold toques for flying the flag so high for such a personal and generous cuisine. His foie gras hamburger and apple crystalline are known the world over, including by young chefs, but all generations gather here to celebrate, not the past, but the future, of French cuisine in the firmament: with potato papillote with truffle or lobster lasagne, pigeon with spices and double corona for dessert, adding to other eternal classics. With a typical epicurean cellar, which fetches old vintages from behind the faggots, and a service well adapted to this high-level "home from home", the moment remains unforgettable.
