Chef's Restaurant Winner of the Gault&Millau Dotation, Piotr Korzen is undoubtedly the Polish gastronomic attraction of the year. After five years working alongside Thierry Marx, followed by a first position as chef at La Machine à Coudes in Boulogne, he is now at home, and his Matka ("mother" in Polish), which invokes his roots, is a fine example of modern transposition: with the buckwheat blinis of his childhood, eggs and smoked trout, kohlrabi drizzled with ribot milk, chlodnik, a simple but delicious ice-cold soup of beet, cucumber and dill, and traditional pierogis, gourmet ravioli with potatoes and grilled onions, sour cream (Russian pierogis and pielmenis are cousins, but different), roladka, a yellow chicken and carrot roll, lightly sweetened with grape-almond-apricot, before a deliciously fresh dessert, sernik, a kind of cheesecake with rhubarb (marbles and slices), vanilla and tagetes. A fine journey, subtle, interesting and inspiring, an encounter between a culture and a chef. Short wine list, from Poland, Austria and Hungary, cider from Poland, simple, smiling setting, stones, beams, bronze or burgundy velvet banquettes, fireplace, friendly service translated from Polish by a smiling young woman.
