Admittedly, it's no longer the time when we were truly transported to the Auvergne, but this historic embassy continues to work for its region, with more discretion and traditions still firmly anchored. Alongside the essentials, a number of all-purpose recipes have become established; we'll be sticking to the land with green lentil salad from Le Puy, duck pate with foie gras from the Limagne plains, Parlan sausage with hearty jus and aligot au mètre, a fine shoulder of lamb cooked in brass for seven hours and aligot. Classic desserts.
