Here's a well-established chef who knows his clientele, his town, and who has mastered his core business: providing a comfortable welcome to loyal customers who want nothing more than to be pampered. For a quarter of a century, Noël Mantel has been doing his utmost to satisfy them, with timeless specialties (lobster ravioli, rack of lamb with thyme) and a few seasonal surprises that are always appreciated, such as scallops with hazelnut butter and truffle, or scallops in bouillabaisse sauce with fennel, artichoke and zucchini in this pretty, typical Suquet setting. An avid collector, the chef also offers a wine list packed with fine labels and regional estates.
