Chef's Restaurant In this touristy neighborhood, Noël Mantel doesn't succumb to the siren song of the easy way out, always maintaining a personal, constantly evolving southern cuisine. The chef creates a genuine menu of products, inspired by the region and looking to tradition, the better to reinvent it. Naturally, we start with a socca, before moving on to egg scramble with black truffle, lobster ravioli and melting leeks, emulsified shellfish jus, roast rack of lamb, thyme jus and market vegetables, a crème caramel to share. Fine cellar of great labels (Tempier, Trévallon, Gauby, Peyre Rose, Arretxea, Ganevat, Nicolas Joly, Rayas, Paquet, Trapet...).
