Chef's Restaurant Who can resist the charm of this institution, where the mere mention of the name Darroze makes you salivate? As soon as the weather's fine, you'll find the same pleasure on the shady terrace, and the dining room has recently been given a more contemporary look, with a bay window providing plenty of natural light. With stone walls, contemporary tables in light wood and comfortable seating, the space is pleasant and promises a good time. Mathis Jonquet, who has been at the helm for a year now, sets the tempo with his respect for the seasons, good produce and pleasant dishes, including gnocchi with aillet coulis and bellota voile, Banka trout, blinis with maître d'hôtel butter, radishes and a very good mustard seed sabayon, all in all a little on the low side for a €90 menu. Fortunately, the final soufflé doesn't fall back and keeps the two toques. In the dining room, manager Pierre Couturier handles the somewhat rigid service protocol with ease, and the Bordeaux wine cellar is imposing, undoubtedly deserving of greater prominence.
