Chef's Restaurant We love this table overlooking the Dordogne, where chef Thomas L'Hérisson (Marx, Fréchon, Martin) cultivates an elegant cuisine of today, demonstrating in the combination of past and present, an equal knowledge of tradition and the new. The technique links terroirs with a real fluidity, giving rise to plates as beautiful as the nature outside, declined in evocative menus, from €70 to €92. Discover a smoked tomato stuffed with shredded piglet, snow peas, chanterelle mushrooms and piquillo coulis; a slice of roasted lean beef, creamy polenta with new garlic and velvety zucchini with basil and candied pineapple tomato, sweetbreads marinated in miso and cooked meunière, green zebra, pine nuts and sage, romaine and black garlic gnocchi, veal jus, raspberry and basil cookie roll, stracciatella ice cream, basil sorbet and Sichuan pepper pulp. The cellar is very well stocked, with over five hundred references. Manuela L'Hérisson provides excellent direction in the dining room.
