Remarkable Restaurant Guillaume Scheer has two qualities that explain his success: he has an enterprising enthusiasm, and he's a cook with a solid trade. Unlike some of his colleagues, he didn't set up shop in a hurry. Before arriving in Schiltigheim in 2018, this chef built up his own experience at the Pavillon Ledoyen, the George V and the 1741, among others. That's why it's so easy to get straight to the point, without denying the details. In tune with the season and the market, Guillaume Scheer delights with finely chiselled dishes and a skilful interplay of textures. Highly sensitive to produce, the chef has also recently become a talented saucier. For example, the citrus emulsion enhances the silky, just-stiffened langoustine; the velvety piquillo flanks the thick, Niçoise-style saint-pierre, while the sweet-and-sour, spicy jus underscores the delicious, oriental-flavored lamb. As for the foie gras served as a starter, the velvety texture of the cream contrasts with the crunchiness of the fine tuile enhanced by a hint of maple syrup. Sweet moments are on the rise, with the fig confit delicacy escorted by an admirable fig leaf ice cream. Everything has been thought through to the smallest detail, and at every table you'll see delighted faces at all this gourmet fun. Advised by a talented sommelier, the cellar is stocked with collector's and local wines chosen from some of France's finest estates. Supervised by Charlotte Scheer, the alert, young and smiling service invites you on a sensory voyage. And let's not forget the taupe-colored decor, with its high ceilings opening onto a patio, which contributes unquestionably to the magic of the place.
