Chef's Restaurant Guillaume Besson's address is still one of the most exciting newcomers to the Alsatian capital, with a sober, Japanese-style decor for a cuisine that's always fine, creative and complex, testifying as much to the chef's time at Coutanceau as to the autonomy he's shown today. In tandem with Claire Andreux, the chef defends a coherent seasonal menu at lunchtime, with zucchini flower stuffed with monkfish mousseline, zucchini violon salad with raspberry-harissa condiment and Thai lobster soup, crispy veal sweetbread with smoked chili bread crumble, grilled zucchini and chanterelle mushrooms, gnocchi and peanut-mustard condiment, or grilled rack of Mont Ventoux pork, steamed pointed cabbage in spiced butter and eggplant confit, small bao of Sichuan pepper confit brisket and Satay jus. Dessert options include melon nage and Alsace watermelon with lemongrass, Genoa bread with olive oil and Genmaicha tea ice cream.
