Chef's Restaurant Since the opening of the Yonaguni spa in 2020, young couples have been flocking from all over the region to let themselves be drawn into a unique universe. After a day in the aquatic labyrinth, everyone gathers in the cosseted dining room, skilfully renovated, where kitsch woodwork has been masked by leather panels incorporating Waydelich drawings. Marie and Cyril Bonnard have traveled from Dubai to Las Vegas. Since their return 10 years ago, they've brought a breath of fresh air to the house, which celebrates its 70th anniversary in 2024. Their return-from-a-travel style cuisine renews tradition, and doesn't stick to local refrains. Beef tataki with shimeji mushrooms, topped with a savory garlic-ginger vinaigrette, is an invigorating starter. Barely seared scallops are topped with aromatic herbs whose flavor is certainly balanced, but in generous quantities that tend to take over a little. In addition to the permanent à la carte menu, the house offers daily suggestions, such as leg of lamb and lamb chops with tender, meaty flesh, accompanied by a well-reduced, full-bodied jus. The exotic matcha dacquoise, doubtless not baked on the day, is topped with a pistachio creaminess that we find questionable in its harmony with the delicious mango sorbet. The creamy Grand Cru chocolate soufflé, with its powerful taste, is more balanced. The cellar is well stocked with Alsace, Burgundy and Bordeaux wines. And every Sunday, we offer the finest brunch in Alsace.
