Never has an Ariadne's thread been so beautifully unwound, linking farm to table. Thierry Schwartz practices the art of naturalness with passion and conscience, reminding each plate of the importance of the land, the land that gives and where artisans work. His home is a tribute to farming traditions and a taste for the good things in life: finely carved wood, polished stone, noble wood-fired cooking, ancestral know-how in fermentation, knowledge of cycles and respect for the product. Every detail is carefully thought out, this rustic spirit at once so elegant and exact, a sunflower tartlet, Saint-Blaise broad beans imagined with a raspberry condiment and ravioli, Mr. Humbert's egg-within-the-egg and meadow herb, an agastache emulsion counterbalancing in lightness, the memorable white trout from the Heimbach spring, meltingly and naturally cooked, with work on the lacto-fermented cherry. Next, a superb suckling veal from the Saint-Odile pastures, with chimney and fleur de sel, pastoral carrot with saffron and veal juice; and finally, Geneviève Huck's strawberries, in a horseradish dessert with a beautiful Japanese inspiration.
