Chef's Restaurant Having worked in some of the world's top establishments (La Dame de Pic in Singapore, Château de Germigney), chef Francesco di Marzio brings modernity and technique to Besançon, in the ultra-contemporary setting of Le Parc. Surrounded by the trees and gardens of the Parc Micaud on the banks of the Doubs, the restaurant offers a breathtaking view of the city, as well as a fine cuisine based on local produce. The chef's compositions are as relevant as they are graphic: leek and potato stew with comté cheese, sorrel purée and roasted potato foam, Arctic char with pontarlier fennel condiment, glazed fennel carrot and tangy gel, fumet de poisson réduit au jus de carottes, guinea fowl in a wild garlic crust, seasonal vegetables, pan-fried foie gras with morel mushrooms and foie gras poultry jus, rhubarb confit, almond and rhubarb cookie, rhubarb compote, almond ice cream and almond milk siphon. Lunch menu €39.
