Gourmet Restaurant Opened in 1959, this family-run restaurant is undoubtedly Besançon's most emblematic landmark, and for decades it has played host to the happy events of the people of Besançon. Today, the venerable establishment is run by Vincent Ferreux, perpetuating the principles of honorable bourgeois cuisine, combining tradition and noble products. Start with pike quenelle, then wild turbot, osciètre caviar and asparagus in a chervil velouté, or chicken supreme en cocotte with yellow wine and wild morels, finishing with chocolate delight, bergamot frappe and citrus reduction. Menus from €35.90 to €60.
