A historic meeting place in the prefecture, visited from generation to generation since 1959. The paneled façade has a timeless air, marking the reliability and regularity of this institutional address. We come here not so much to make discoveries as for the pleasure of serious, familiar cuisine: asparagus velouté from the Landes region, pike quenelle with langoustine coulis, cochon comtois mignon with macvin jus and pak choï cabbage, lemon confit tartelette with caramelized mascarpone cream.
