Gault&Millau's review 2026

This is one of the restaurants of the new guard in Bisont, a smart and inspired neobistro run by Arnaud and Clotilde. It's a well-executed market cuisine, playing on cooking methods with intelligence, a maigre à la flamme, tzatziki, saladine of fennel and trout roe, a ris de veau aux morilles et flambé au madère et savagnin, a lieu jaune, saladine of chickpeas, chillies, coriander, peas and cold carrot cream, mascarpone and green anise, angus parsley, pepper sauce, grandmother's purée, veal chop, mushrooms with vegetable stuffing, reduced jus, wild asparagus, grandmother's purée, strawberry tartlet, lemon-verbena sorbet and cherry gel. Fine cellar with over five hundred references.
