Gault&Millau's review 2023

It's a classic, a house that established its credentials a long time ago, and is almost indispensable. The toques don't shine as brightly as they used to, but Arnaud Bouxirot manages to maintain 1 toque and a decent level, which will please the regulars. Reassuringly traditional after the somewhat clumsy starters, with the carpaccio of wild octopus from Palamos, wasabi aioli, tobiko with yuzu, which adds chewiness and meaning, and the back of Label Rouge Corsican lean roasted on the plate, sweet potato pulp, virgin sauce with olive oil from the Partégal mill. An elaborate dessert (in the spirit of the piña colada, creamy ivory chocolate and virgin coconut pineapple...), a friendly and attentive welcome and service, a well-stocked regional cellar (the stars from 1 to 3 for the strength of the wine are a little strange), with little information when it's the sommelier's day off.
