Prestige Restaurant If you arrive a little tired from the booking protocol, the warm and friendly welcome will put a smile back on your face. For this legendary establishment carries with it a promise of gourmet pleasure that must never be extinguished. Times have changed, and over the past three years, we've moved to a more limited offer with set menus. Nevertheless, once you've got the hang of it, you're easily won over, from the Arctic char in potato broth with Etrez cream and oxalis, to a lovely composition with red mullet and crab foie gras, almost two dishes in one, with the artichoke serving as a common thread with distinction and varied textures. Eric Pras's cuisine is all about this dish, generous and technical, multiplying prowess without fear of overdoing it. Moreover, over time, he's able to dose and refine, the acidity for example, the pomelo on the red mullet, the citron on a fabulous saint-pierre, whose deep soul he restores, sweet and iodized, with a little praline from the skins, mustard sabayon for unctuousness, and a beautiful declension on the asparagus (the satellite gnocchi of saint-pierre is an amiable but not indispensable counterpoint). And from the pigeon with spring vegetables, he creates a very complex, rich and subtle dish, with its condiments (local beer, shallot), its spelt risotto and an incredibly precise pigeon jus. Depending on the menu, the chef will work with lemon, or an excellent marriage of chocolate and blackcurrant, very pretty and gourmet. Service is perfectly in keeping with the style of the house, neither emphatic nor overly stuffy, orchestrated with the right approach by manager Cédric Servain. Remarkable Burgundy cellar in all its compartments, great vintages and great names, plethoric choice on all climates, allowing high pleasure at all budgets, and advised with excellent spirit, erudition and listening, by Sébastien Reymond, already awarded at the Gault&Millau Tour 2022.
