Ah, the beautiful work and the constant pleasure experienced by travelers with memories or those in search of them. Yohann Chapuis is a worthy artisan of the durability of this institution, whose name clatters in the firmament of Burgundy. Greuze in Tournus is like porcelain in Limoges or horse-riding in Saumur, a kind of French label for the art of living. The chef, initially restrained and respectful, has made his mark. Today, he is the undisputed master, the conductor of an orchestra well versed in delivering the liveliest of symphonies. This winter, we've enjoyed a fine marriage of Marennes oysters and Jerusalem artichokes, escargots œuf épinard jus moutarde, scallops and pig's cheek, and venison with grand veneur sauce... Each episode is tasty (in spring, pike-perch and Miéral duck are on the menu), the desserts are just as meticulous, the service precise and approachable without overdoing it, and the cellar wide open to the vineyards from south to north.
