Remarkable Restaurant The institution is doing well, and every Burgundian at heart can thank Yohann Chapuis for maintaining it as an important and unmissable landmark on the royal road to regional gastronomy. The chef is a goldsmith who pays attention to every detail (in the comfort and bourgeois elegance of the dining room, in the Coquet crockery and, of course, in the skilfully studied plates) to reveal the naturalness first, concealing a primordial technique. A seasonal start with asparagus wrapped in comté cheese, culatello and coffee sabayon, the regional with snails, egg and mustard jus, the modern with octopus brocolini, fennel and anise, the traditional with pigeon, shallots and braised leg confit, before a sweet dessert of lait d'Etrez, rhubarb, elderberry, poppy and agastache: The Ecrin menu at €130 speaks volumes about the restaurant, and is all the more enjoyable when you consider that each dish is also available à la carte. Meticulous service, a remarkably extensive cellar and just the right prices, led by head sommelier Anthony Bouitka.
