Gault&Millau's review 2025

One of the most successful openings of the year. Last April, Singapore-based Como unveiled its first French address in the heart of the Burgundy vineyards. Housed in the village's former inn, the space has been brought back to life thanks to the talent of designer Paola Navone, who drew inspiration from the colors of Burgundy and regional craftsmanship (zinc roofing, glazed terracotta, etc.). Conceived as "chic sanctuaries", the first 17 rooms in the main building are illuminated by forest-green and royal-blue Jouy fabrics, while the 8 rooms in the Residence are adorned in luminous whites. Across the square, Villa Christine infuses the atmosphere of a private home with its 5 rooms and suites. In the common areas, wood and stone mark the spirit of the place, as in the dining room where an entire wall is covered in sumptuous woven willow siding. It's in this arty, contemporary atmosphere that you can savour the delights of Romain Versino, who twists the traditions of great Burgundian cuisine, like this pigeon in a cereal crust, a must-have on the menu. Another success is the wine and food pairings created from the 1,300 references selected by sommelier André Berthier, who also invites oenophiles to visit the most prestigious cellars in the area... Last but not least, the hotel will soon be opening the Como Shambhala spa, which will combine Asian-inspired treatments with wine therapy programs. The 5-star retreat, set on one of the world's most famous wine routes, will be able to offer even more.
