Remarkable Restaurant An authentic, passionate, pure chef. This is how Jean-Michel Carrette operates, following in his father's footsteps, in an environment and home with a strong family character. It's this sincerity that we salute here, in this beautiful setting with noble materials, all natural, with the thick stone wall, wood panels, old furniture and copper, in a beautiful contemporary dining room. On the plate, the same quest, a touch of simplicity, almost naïveté at times, but a big heart and a commitment to local, farmhouse and artisanal produce: with cauliflower foie gras cassis, snails from Meursanges and mushrooms with a powerful garlic flavor, an interesting and spectacular work on scallops, more for the texture than for the flavor (a little less sea, a little more earth) in this potimarron and scallop effeuillé, citron, dashi mounted in lemon condiment butter and a small cream of beards like tripe. Classic digression with truffle consommé on vegetables of the moment, and truffle brioche, before the beautiful langoustine cooked on a log, with xo sauce and a tortellini of claws. The slice of jersiaise fillet, perfectly cooked, carmine and treviso for bitterness, full-bodied jus, a purée in emulsion perhaps deserves a more sober presentation of this magnificent product, and the blanc manger à la chartreuse closes the proceedings with tenderness. The remarkable cellar is that of a collector more interested in the winemakers than the labels: 15,000 bottles bringing together all the chapels, the great names of Burgundy, the best of the Rhône, vin orange and nature too, but above all the artisans of excellence.
