An authentic chef, a true enthusiast, a man of integrity. That’s Jean-Michel Carrette in a nutshell, following in his father’s footsteps in a setting and a restaurant with a strong family atmosphere. It is this sincerity that we must celebrate here, in this beautiful setting with its noble, all-natural materials—the thick stone wall, the wood paneling, the antique furniture and brass—in a lovely contemporary dining room. On the plate, the same dedication, a touch of simplicity—almost naivety at times—but a big heart and a commitment to local ingredients, farmers, and craftsmanship: with the cauliflower, foie gras, and blackcurrant, the Meursanges snails, and the mushrooms with their powerful garlic flavor; an interesting and spectacular treatment of the scallops, focusing more on texture than flavor (a little less sea, a little more land) in this layered dish of pumpkin and scallops, citron, dashi whipped with lemon-infused butter, and a light cream of seaweed resembling tripe. A classic interlude with truffle consommé over seasonal vegetables and truffle brioche, before the beautiful langoustine cooked on a log, with an XO sauce and tortellini made from the claws. The slice of Jersey fillet, cooked to perfection, with carmine and radicchio for bitterness, a robust jus, and emulsified purée, perhaps deserves a more understated presentation of this magnificent product, and the Chartreuse blanc-manger brings the meal to a tender close. The remarkable wine cellar belongs to a collector focused more on winemakers than on labels: 15,000 bottles encompassing all the major styles, the great names of Burgundy, the best of the Rhône, some orange wine and natural wine as well, but above all the artisans of excellence.
