At the entrance to Agde, not far from the road to Sète, Stéphane Lavaux's address is a fine gastronomic experience, as capable as ever of distinguishing itself by its research and originality. The chef likes to explore and revisit associations, imagining a cuisine d'auteur where we'll see apple and gingerbread with foie gras and black truffle macaroon, stuffed quail, saffron and pine nut risotto with roasted red mullet fillets and squid, a fine plate of pig's trotters and veal kidneys, meat jus with basil, and finally poached pineapple with green tea, caramelized puff pastry and iced nougat.
