Gault&Millau's review 2025

"Souquious" means vine stump in Occitan, and it's in homage to this ancestral vine culture that Fabien Morcel and Gilles Pascal have named their beautiful address. In the heart of a natural setting of vineyards, holm oaks and garrigues, the duo have imagined two lodges, "L'Arbre Perché" and "Le Nuage", luxuriously decorated and lit by bay windows that open onto a terrace, with access to the natural infinity pool. An ideal refuge for those who wish to combine nature and refinement, the place offers tasty breakfasts, chic snacking with aperitif boards and a table d'hôtes with menus designed by the owners and young local chefs, who are regularly invited. A rare address close to the region's most beautiful spots: Pézenas, the cirque de Mourèze and Saint-Guilhem-le-Désert...
