In the heart of the city, in a stunning vaulted setting with historic walls, a restaurant brimming with refinement and character. Chef Thomas Sanvoisin presents a creatively imaginative cuisine that harmonizes with the venue—drawing inspiration from the region as well as from his travels—and features premium ingredients showcased in a beautiful €70 menu that celebrates both land and sea: rock octopus and pig’s trotter with kimchi cabbage and tonkatsu broth; artfully prepared oysters with William and Nashi pears; raïb milk and brousse cheese, crispy veal sweetbreads and shellfish in a lovage broth, raspberries refreshed with elderflower, and a vinegar-infused sorbet. A well-stocked wine cellar featuring a wide variety of regional wines.
