Chef's Restaurant A place of charm and elegance in the heart of Marseillan, in the birthplace of Achille Maffre de Baugé, whose walls and superb wooden doors are listed. If the second room, behind the reception, is less majestic than the vaulted main room, with its old stones, arches and large sandblasted tiles on the floor, it also has its appeal, with beautiful Anduze vases and pretty vegetation. The good €70 menu provides the essentials: scallops Jerusalem artichoke, Colonnata bacon, Mediterranean line-cut meagre, garbure marine, like a tartelette around ventrèche, a well-constructed dish of great originality, before a good chocolate dessert, shortbread tart, toasted vanilla cream and persimmon sorbet. Professional welcome and service, well-constructed cellar.
