Chef's Restaurant In the magnificent space of an 18th-century wheat market, Sébastien and Michel Bras were lucky enough to be able to express their love of the terroir in the heart of Paris. A chance to breathe in a little Aubrac air in this cuisine of pleasure, delicacy and precision. The varied menu, available in two set menus at €98 and €108, is an ode to all the good producers who are sought out all over the country for tasty, well-constructed dishes: mackerel from petit bateau with linseed and anchovy, niac (the house condiment) with espelette olives and nori vinaigrette, roasted chevreau de l'Aveyron with roasted cébettes, turnips and blond pea niac with sunflower cuméo, before a superb dessert of chocolate buckwheat mousse and candied yuzu.
