Located under the dome of an art gallery, this grain market allows visitors to discover the creative cuisine of Michel and Sébastien Bras on the third floor. The view over the rooftops of Paris or the glass dome is very pleasant. For those in a hurry, there's a lunch menu at €57, and for gourmets, the "balade" menu at €108, which takes you on a culinary tour of different regions: Normandy with scallop broth, Landes with grilled asparagus, Basque Country with cod confit in shavings, snacked gurnard, fennel and coral lentils, Aveyron with oven-roasted ewe served with the famous aligot. Finally, two desserts: poached and candied mango hidden under a fine chickpea meringue, and "an interpretation of the original 1981 coulant". All dishes are accompanied by grains, seeds or seeds: quinoa, kasha, sunflower, spelt, rye, buckwheat, pearl barley, aniseed niac, juniper-squash niac, kasha-oat niac etc... An original and innovative cuisine, and what's more, the wine list offers a wide choice from all regions and abroad.
