Since 1946, generation after generation - the fifth today - the Millo family has reigned over the Auberge de la Madone in Peillon, one of France's most beautiful hilltop villages, just a stone's throw from Nice. Here, time seems to stand still, and both regulars and passing travelers enjoy the nostalgic atmosphere. Thomas follows in the footsteps of his father, Christian, but also in those of his grandmother, with whom, even as a child, he tried his hand at cooking... by baking his toys. Fortunately, the products have changed, but the spirit has remained. On the plate, you'll find the staples of sincere, deep-rooted Southern cuisine: stuffed zucchini flowers, girolles with a perfect egg, roasted loin of veal with a gourmet purée, or tender Sisteron lamb roasted in two batches and flavored with garden herbs. In the cellar, some 75 wines, from small, passionate producers to prestigious labels, reflect the image of a house that combines tradition, generosity and expertise. Warm, efficient service.
