He serves as he would like to be served in a restaurant, cooking the real thing with local produce. Chef Romain Clavel-Millo is like his table, atypical, not only for its location in Peillon, one of France's most beautiful perched villages, but also for the warm atmosphere that emanates from the place, made even sunnier by the welcome and smile of his mother. Finally, by the illustrious ancestor, Bernard Clavel, who has certainly passed on to his grandson a little of his genius, not in the art of combining words, but in that of cooking with authenticity. There's no à la carte menu; the dishes are announced in the dining room by the chef himself, who, drawing on his daily pickings from the family vegetable garden or finds from friends in the area, will devise a three-course meal for just €38. And the hardest part will be choosing, after tasting a few slices of homemade cured ham on a focaccia lightly flavored with anchovy and a velouté of the first peas, among the starters, main courses and desserts. Between the barbajuans, fried ravioli with chard, eggplant confit with goat's cheese crisp, or a trio of Camargue rice garnished with a few lardons of homemade Gascony black pork, squid and local artichokes, all accompanied by a citrus juice. An even tougher choice between slow-cooked country lamb with ras el hanout spices, confit duckling leg with baby vegetables, fillet of saithe, apple tart or panna cotta with bitter almond milk and orange confit... And as indecision seems to tease our senses, imagine yourself choosing the wine to accompany all these pleasures from among the cellar's 1,400 bottles, some of which date back to 1928.
