Chef's Restaurant As the title of one of his hidden menus suggests, Jordan Yuste is now "limitless", and can impose his choices on a clientele that's won over to his cause. He can now push his prices to suit his exacting standards, offering two evening menus at €99 and €129, and a lunch menu at €55. All without meat, because in Sète, quality fishing is naturally a godsend, and the chef has made a specialty of iodized flavors.
