Here, clothes clearly don't make the man. Behind a discreet front and a somewhat classic-looking menu, you'll discover a cuisine that's far more accomplished than you might imagine. Dishes are tasty, precise and respectful of the season and the market, with a real focus on textures and combinations: carpaccio de saint-jacques, pickles d'oignon rouge, praliné cacahuète and cremeux de potimarron, with a meticulous presentation and harmonious products; bar rôti, jus de bar et saint-jacques, risotto de panais et chanterelles, a second tasty and melt-in-the-mouth starter; roast squab, beautifully cooked to a rosy pink, carrots in declinaison, carrot-butternut mousseline, before a revisited floating island, with apple-pear compote, chocolate cream and tonka bean ice cream. At the end of the service, the chef comes to the dining room to check that everything has gone well, a gesture that underlines the attention paid to guests. In the cellar, an extensive selection covers all the major French wine-growing regions.
