Sponsored Simon Dutriez has set himself the challenge of working with 100% French seasonal fresh truffles. Fascinated by this very subtle dish, he has come up with an original concept: to use broken truffles from Périgord and/or Drôme as starters, and sometimes even as desserts. With talent, the restaurateur sublimates his dishes in the most beautiful way possible. Imagine: a marvellous truffled breaded soft-boiled egg, a delicious duck breast with truffle sauce, a land and sea of tuna tataki with truffle sauce, risotto and tagliatelle flavoured with this delicate mushroom, not forgetting an astonishing chocolate mousse with... truffle, of course!
