At his restaurant Rouge Barre, Steven Ramon continues to play a major role in establishing the capital of Flanders as a hotbed of culinary culture. He is one of the first, alongside Florent Ladeyn, to offer an eco-conscious take on local cuisine, and this philosophy shines through in his clean, minimalist plates that highlight the ingredients: green beans with radishes and gremolata, mackerel with peas and arugula, monkfish with zucchini and chanterelles, veal with eggplant and broccoli—all part of this excellent €60 set menu that has stayed true to its concept, featuring well-defined ingredients, each in its rightful place to create winning combinations. A very pleasant, intimate atmosphere, and an interesting wine cellar with a varied selection by the glass at affordable prices.
