This is a well-known hotel in Belfort, where you can enjoy gastronomic cuisine of a fairly high standard, by Laure Étiennot. It's a controlled, bourgeois experience, with an engaging seasonal menu: octopus okonomiyaki, Montbéliard sausage, sauerkraut, horseradish sauce, bonito katsuoboshi, red cabbage pickles and lemon gel, a salmon pavé à l'unilatéral, black rice with sorrel, cébettes vierge, pomegranate and lumpfish roe, ballotine of stuffed yellow Alsatian poultry, lentil dahl with sweet spices, crisp fennel salad, yogurt sauce and fried chickpeas, puff pastry arlette, pistachio ganache, rhubarb confit and rhubarb sorbet. Exceptional cellar, with over 1,500 references.
