2018 Young Talent Christian Greffier is still here, fit and smiling, continuing to offer the city a good market table. His menu is efficient if not consensual, and the technique follows well, on asparagus with parmesan cream and poached egg, scallops, tarragon sauce and celery risotto, stuffed chicken fillet, morel and yellow wine sauce, mashed potatoes, kiwi gazpacho, poached pineapple and white chocolate cream.
