For him, cooking is a philosophy, and curiosity is the driving force behind his work in the mountains and by the sea, in both traditional and gourmet settings. And while no Signature dish can be announced, his Sisteron lamb chops with mushrooms or his seafood carbonara are absolutely marvellous.
