Chef's Restaurant A magical place... In the Mediterranean garden of the Château de Valmer, diners enjoy an aura of serenity and well-being that can only be found in some of the world's finest houses. Impeccable service, a fine sommelier and a delightful welcome all add to the feeling of a soothing cocoon. The Provençal scents of flowers and herbs surround these chic meals, so well prepared by Alexandre Fabris, whom we knew well at La Signoria in Corsica, and who benefits from the best conditions to develop his beautiful Riviera-tinted cuisine, with a certain sobriety that enhances the product: Lobster and eggplant, Mediterranean sea bass and zucchini in texture, perfectly cooked, slightly crusty sweetbreads from Metzger, Sisteron lamb and organic chickpeas... Everything is meticulously executed, with well-matched flavors. An extensive wine cellar combining regional and top labels, in the same chic vein as the house.
