Émilie and Thomas have moved from Rodez to Conques, to be closer to Aveyron's nature, in this old mill along the river, which can be seen from the large bay windows of the restaurant, once owned by Hervé Busset. As the meal stretches out, we take advantage of the setting to savor seasonal and local dishes, such as morel mushrooms with manzanilla emulsion, flanked by red tuna ventrèche to add a salty, iodized perfume. Asparagus in a variety of textures (crunchy, thinly sliced, shaved...) is accompanied by a fine Noilly Prat sauce and pan-fried gnocchi. The foie gras and artichoke, a little fatty, deserves more balance. The fillet of Aubrac beef is very tender and the spinach condiment enhances the taste, while the caviar butter is less distinctive. The grand four-course dessert (fennel and apple, strawberry financier, hibiscus passion, chocolate pistachio) brings the meal to a gourmet conclusion. Pleasant service, a locally-oriented wine list with a selection from the great regions, at all prices.
