Renaud Darmanin has turned it into the finest restaurant in the region, but his greatest achievement is undoubtedly that he has remained an innkeeper at heart, welcoming travelers and offering them comfort and culinary delight. In this superb Cantalian stone-and-tile house, with its famous tower, he offers cuisine deeply rooted in the local region, featuring hidden menus that somewhat contradict the spirit of an inn but allow him to manage his supply chain more effectively. For a more modest budget, guests can enjoy the bistro, the Oxalis, which lets diners choose from a short menu to satisfy their cravings.
