Pierre Gagnaire's generous and ingenious touch is felt throughout the entire brigade, all striving to be worthy of his signature. The dishes are compositions of flavors, colors and fragrances that bear little resemblance to hotel catering, even as prestigious as Maison Albar. You'll quickly escape into a world of Gagnairien, with scallops in a corolla with an apple and salsify yellow wine sabayon, poached wolfish steak in clarified butter and lacquered with orange and turmeric, infused with sardine escabeche, or roast Chalosse poularde, white escalope and leek fondue, leg in stuffed cabbage and petit épeautre. There's always room for this "great Pierre Gagnaire dessert", which covers all tastes, with a Languedoc cellar and fine labels, expertly recommended.
