It's not just the Pierre Gagnaire label that we come to find in this beautiful hotel near the Maison carrée: it's an experience, and also a style, that of a chef on the loose, that of a round always full of charm around products, each providing a theme, telling a story: scallops, crisp with ink, coated in a truffle gel and embeurré with green cabbage, with endives fondue and champagne sabayon; or red mullet on a bed of salt, rouille bound with chickpeas, murex razor clams and clams: and then the leg of Castille milk lamb rubbed with spices then roasted with "aromatic Provençal" small spelt shallots and apricots. This is a unique story that is whispered softly to the discerning palates that frequent this palace, until the Grand Dessert Pierre Gagnaire concludes with another farandole. The service is top-notch, giving the moment the solemnity it needs to be a success, and the wine cellar is extensive, boasting the very best from Occitanie and other fine vineyards, including champagne.
