Isn't the garden beautiful? says Michel Kayser to some guests enjoying the view. It's the very image of this magnificent house, where everything is in harmony and gentle living. Monique and Michel Kayser, after forty years in this place which still bears the name of its creator Pierre-Alexandre, from whom they bought the business, have turned it into an idyllic gastronomic temple. More than that, it's a living, breathing place where the teams are close-knit, determined and supportive, and where talent is everywhere. The chef sets the example: what meticulous, imaginative and refined work he has put into this latest creation, the brandade appetizer, all lightness and flavor, and the rabbit, which astounded us with its precision and imaginative composition and textures (the saddle like a pâté en croûte, the jelly, the jus as an ice cream, the shredded meat with a carrot coulis), a farmhouse marvel and a truly great dish. Behind every mouthful is a culmination, in which every detail counts, like the touch of elderflower vinegar that brings a hint of bitterness to the mousseline made with asparagus cooking water on white asparagus, or the desire to lighten the Mediterranean of these invasive blue crabs by working them into a tielle-style paste and the claws for the bisque, or the extreme precision of the crousti-moelleux of the sweetbreads with the declining cauliflower. In a kind of ease, this cuisine gives the impression of an enormous mechanism in perfect working order, aided by the fluidity of the service orchestrated by Monique herself, with her smiling, reassuring presence, who knows her guests' desires so well. For dessert, there's also the incredible "library of delicacies", with each panel revealing an abundance of ice creams, entremets, chocolates, tarts and confectionery, enhanced by a choice of plated desserts on seasonal themes, such as citrus fruits or apples in three versions, elegantly playing on textures and temperatures. From the appetizers (remarkable inspiration on pink radish) to the mignardises, there's not a line, not a crumb that doesn't have its justification, often paying homage to the surrounding nature and all the region's producers, and their quest for perfection. A powerful and erudite cellar, established by chef and head sommelier Lionel Delsol, which shows the Gard and Languedoc vineyards at their best.
