Chef's Restaurant True to his playful approach to tailor-made experiences, Matthias Leuliette is never more serious than when he chooses products and forges links with breeders, fishermen and farmers... It's in this sense that his Après-Demain is endearing, beyond the notable difference with a "normal" restaurant. Depending on what's on the menu at any given time, and what you and your chef are in the mood for, the sequence won't necessarily be the same as the one next door. Personality, surprise and, more often than not, seductive preparations, such as anchovies from Getaria, foie gras fermier, Kintoa pig, chipirons or hake from Saint-Jean de Luz. A space and a moment of relaxation in the warmly appointed interior that was once the Clos Basque.
