Following the seasons, the chef evolves his compositions with a rather contemporary approach: chipirons salad and sautéed gambas with vegetables, half-cooked foie gras tartine, roasted blue lobster with lobster sauce and sautéed vegetables and alubias, Landes poultry supreme and white rice à la basquaise, peach melba.
