A solid-gold location, a reputation, a style. It's the Café de Paris in its beautiful stone building facing the ocean, where breakfast is served at dawn and the bar is open at all hours. The table is maintained at a high level, with standard dishes arranged according to fashion or influence: snacked calf's head ravigotée with piquillo mushrooms, foie gras, smoked salmon, Pyrenean trout beurre blanc, hake shells Jerusalem artichoke shrimp emulsion, vol-au-vent with a fricassee of morels in yellow wine, pineapple passion soufflé..
