Gault&Millau's review 2026

Another change at Germigney with the arrival of Julien Thomasson, whose work we've always appreciated during his visits to the six corners of France. We sincerely hope that this fine machinery of a highly reputed hotel will stabilize. This will enable us to enjoy a cuisine that can once again lay claim to three toques. With confidence, then, in the crab and langoustine carcass reduction herb sorbet, the wild fish demi-sel rave and artichoke beurre battu with herbs bisque siphoned, the calf sweetbread and gaude crisp tannic juices, in a fine four-course menu at €135 (upgradeable to six courses for €165) through to the raw and cooked blueberries lactic foam with verbena hibiscus juice. Very rich Jura wine cellar.
