The famous hotel's dining room is up to the challenge, with an elegant setting combining old stone with contemporary lines, and a well-executed regional menu featuring both generous recipes and healthier compositions. The menu includes Comtoise salad, poultry ballottine with oyster mushrooms and hazelnuts, trout cooked in blue wine with Savagnin sauce, vegetables and pommes grenailles, poultry supreme with morel mushrooms and yellow wine cream, and a traditional yellow wine crème brûlée. An interesting cellar, with a good selection of Jura wines (Aviet, Jacques Tissot, Frédéric Lornet), and more of a Burgundy negociant.
